OCR: A QUICK INTRODUCTION TO BREWING GF QUICKBEER is the simple, old Bavarian recipe, Malt, Hops, Yeast and Water, with 3/4 cup Corn Sugar added later for carbonation. This is a no- fuss recipe to get first-time brewers started, but advanced brewing differs only in details. As with most cooking, measurements are approximate. Completely dissolve about 6 # Malt Syrup in about 2 gallons of water. Add Water Treatment if you're using it. Bring this to a rolling boil, and after 15 minutes, add about 1 oz. Hops. Boil for another half an hour, add about 1/2 oz. hops. Boil another 15 minutes, turn off the heat, add about 1/2 oz. Hops. Add cold water to make 5 gallons. Sprinkle 10 grams dry Ale or Lager yeast on the surface, and cover. It should foam up within 24 hours. If you're going to transfer it to a carboy, do it as soon as the foam collapses. If you're doing it all in one container, put the airlock on. Keep it cool and dark. Leave it alone until it finishes fermenting and begins to clear. In a bottle, you will see it get very clear at the top, and the bubbles will stop or get slow enough to count. It will usually be ready to bottle in 10 days, and should never take more than a month. Siphon the clear beer out, leaving as much of the yeast behind as you can. Mix the 3/4 cup Corn Sugar in well. Siphon the beer into bottles and cap. Store it bottom down. . It will be carbonated in just a few days, but may take up to a month to get really clear. Pour it out carefully, and you will leave the yeast sticking to the bottom of the bottle.
